Peppermint Fudge {A Christmastime Treat}

I found this recipe in the latest copy of Family Fun magazine.
It looked pretty yummy and easy, so I thought that I would give it a try.
I did adapt it a little- I did half of this recipe and I used peppermint baking chips instead of crushed peppermint candies.

Ingredients:
24oz white chocolate chips
1 (14 oz.) can sweetened condensed milk
pinch of salt
1 tsp vanilla extract
1 cup coarsely crushed peppermint candies

Line an 8-inch square pan with parchment or waxed paper with the paper hanging over the sides somewhat. In a medium bowl, stir together the white chocolate chips, the condensed milk, and the salt. Melt the mixture according to the white chocolate chip package directions, then stir in the vanilla extract and peppermint.  Pour the fudge into the prepared pan and use a spatula to spread evenly. Chill the fudge in the refrigerator until it is set, about 2 hours. Use the overhanging flaps of the paper to lift the fudge from the pan, then slice it into 1-inch squares.
The recipe makes 64 candies.
And of course, the half recipe made 1/2 of that :-)
Enjoy with a cup of cocoa while watching Elf!
