I made a yummy chicken, broccoli and rice casserole on Wednesday night and wanted to share the recipe. I think it is the best one I have ever had!
3 cups prepared rice (1 1/2 c. when it is still dry)
1 package of frozen broccoli or a head of fresh
1 can cream of chicken soup
1 can cream of mushroom soup
1 1/4 c. water
1/2 block of Velveeta (I use less than that)
1 T. butter
1 bunch celery, chopped
1 large onion, chopped
2 chicken breasts, cooked and cubed
salt and pepper to taste
Cook broccoli until thawed. Preheat oven to 350 degrees. In a medium saucepan over low heat, mix soups and water. Gradually stir in cheese until melted. Be careful that the cheese doesn't burn. Melt butter in a large skillet over medium high heat and saute celery and onion until soft. In a large mixing bowl, combine broccoli, rice, chicken, soup and cheese mixture and celery and onion. Season with salt and pepper. Pour mixture into a 9x13 inch baking dish. Bake for 45 minutes, until bubbly and lightly brown.
