Zesty Picante Chicken

I have missed posting our recipes! I hope to post a lot more this summer now that things are calming down. Here's a family favorite-


I found this recipe in the Gooseberry Patch Slow-Cooker Recipes cookbook years ago.  It is such a simple, affordable, and very yummy recipe!

4 boneless, skinless chicken breast or 6 thighs (we prefer thighs)
16 oz. jar picante sauce or mild salsa
15.5 oz. can black beans, drained and rinsed
2 cups prepared rice
shredded cheese (to your liking!)

Place chicken in a greased slow cooker. Add picante or salsa; spread beans over the top. Cover and cook on low setting for 6-8 hours or until juices run clear when chicken is pierced. Top with shredded cheese and heat until melted. Serve over prepared rice.
